Title: Potato Pizza

3cPotatoes -- cubed
1cWhole wheat flour
1lgTomato
1smOnion
1/2cTomato paste
2tsOregano
1 Clove garlic
1cRicotta cheese, nonfat --
  Or
1cWhite cheese, 1/2% fat --
  Dry type
2tbParmesan cheese -- grated

Scrub potatoes, but do not peel before cutting into cubes. Boil until soft, then mash, and add flour until quite stiff. Spread mashed potato mixture in the bottoms of two lightly pam sprayed 8 x 8-inch (20 x 20-cm) baking pans, or on the bottom of a lightly sprayed cookie sheet with sides. Place in a preheated 400 degree (200 C) oven for 15 minutes while preparing sauce. In blender, combine the tomato, onion, tomato paste, oregano and garlic. Process on low speed until smooth. After 15 minutes, remove crust from oven. Spread ff ricotta evenly over the crust. Top with the sauce and sprinkle with ff Parmesan. Return to the oven for 15 or 20 minutes, until done. Serve hot.
